René Redzepi is now one of Denmark’s most famous people. He is the ultimate superchef, juggling the demands of running one of the world’s best restaurants with TV and print appearances, book writing and ground-breaking New Nordic food exploration.
The Noma menu
Previous Scandinavian delicacies at noma have included Icelandic seaweed, Faroese deep-sea fish, Greenlandic musk ox and sorrel from Danish forests. The chefs do all their own curing, smoking and pickling and are at the forefront of new techniques to combine and prepare ingredients in innovative ways. Tempted?
